Seasonal Pumpkin Cookies

Ingredients: 2 1/2 cups all-purpose flour, 1 tsp baking soda, 1 tsp baking powder, 2 tsp ground cinnamon, 1/2 tsp nutmeg, 1/2 teaspoon salt, 3/4 cup granulated sugar, 1/2 cup softened butter (1 stick), 1 cup canned pumpkin puree (i.e. LIBBY’S 100% Pure Pumpkin.), 1 large egg, 1 tsp vanilla extract, Glaze (recipe follows)

 

STEPS: Preheat oven to 350 degrees F. Grease baking sheets. Combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a medium bowl. Beat sugar and butter in a separate bowl until well-blended. Beat in pumpkin, egg, and vanilla extract until smooth. Gradually beat the flour mixture into the pumpkin mixture. Drop cookie dough onto trays lined with parchment paper. Bake for 13-18 min or until the edges are firm. Allow the cookies to cool before applying the glaze.

 

FOR GLAZE: Mix 2 cups powdered sugar, 3 tbsp milk, 1 tbsp melted butter, and 1 tsp vanilla extract in a bowl until smooth.
